Mexican Chayote Squash is a vigorous vine from the cucumber family (Cucurbitaceae) and is native of Central America (Mexico) where is has been cultivated for centuries for its edible fruits. It makes lobed leaves and small yellowish-white flowers which are followed by apple-sized light green, single-seeded fruits up to 500g in weight and which can be eaten raw in salads or are baked and cooked. The fruit is similar in taste and consistency to Cabbage Turnip (Kohlrabi). The seedling usually need two growing periods for the first harvest except for a very warm and long summer when fruits are set in the same year of potting. Fruitset is in autumn and winter, thus plants have to be grown in a warm greenhouse to produce fruits.
Fruits are viviparous, i.e. the seed is already rooting while still being in the fruit. Thus plant the entire fruit some 1/3 deep of its size in any rich, well drained soil. Keep pots in an always sunny and warm spot throughout the year. The plant is very fast growing. Keep drier in winter at a minimum of some 15°C. Requires a climbing aid.
